水牛の牧場視察。
カトマンズ近郊での水牛を集める場所、
牧場と2か所視察。
１．肉の出荷は5-7歳
２．ホルモンも含めた肉の重量は150㎏-250㎏
３．3歳ぐらいだと2．の条件の重さが大体100㎏ないくらい
４．餌は藁、トウモロコシ、小麦の殻など。
(酒粕。トウモロコシの粉は湯で煮てドロドロにしたものと藁を細かく切ったものを混ぜて食べさす)
※麦の藁はダメ。コメの藁のみ食べさせている。
５．水はたくさん飲むし重要。夏は2回、そのほかの季節は1回水浴びさせる

今年も残すところあとわずかですね。
ちょっとご縁があり、国産の水牛の肉を取り扱うことになります。やっとやっとの水牛の肉です。
実は、1週間前にネパールから帰ってきたばかりで、今回のネパールでは、ネワールの食文化を中心にネパールで学び、その過程でもちろん水牛の牧場や、トリコテール(マスタードオイル)の工場、肉屋、色々巡り、話しを伺ってきました。そしてネパールを訪れて再度確認出来たことは、僕は本当にネパールが好きだし、ネパールの食文化が好きだということ。なので、ネパールの料理を作るときにはネパールの食文化をなるべく理解して、そして真摯に尊敬の念を持って、より美味しく作るように精進することだと改めて思いました。
ポーズとかではなく、ネパールの食文化に沿って、お客様に何を伝えたいかも、もっと考えないといけないとも思っています。
そしてそこで最重要な部分になるのが水牛の肉です。
ネパールの食文化だけでなく、特に大好きなネワール族の食文化に欠かせない、とっても重要な肉。
なので、現地の食文化をネパール産の水牛ではないけど、お届けできるようになり、やっとここまで来たかという感じです。
もちろん、現地の味だけど現地よりも美味しく調理したいとも思っています。
それもこれも、常日頃から通っていただいている全てのお客様のおかげです。

また、今後は業者様向けに水牛肉の販売も考えております。そちらに関してはお問い合わせ願います。
